Elzbet (Elizabeth) is a farmer’s wife who lives several miles from the nearest road. The solar dehydrator was donated by the Ethiopian Sustainable Food Project. She uses it every day to dry boiled potatoes for potato flour and she can dry grain and other food without contamination, even on rainy days. The traditional method is to dry foods on a goat skin on the ground. The Food Science staff have done many workshops for farmer’s wives to demonstrate other methods of potato use. The improved varieties produce higher yields so ways to preserve the extra potatoes are needed.
